# Interview excerpts (restaurant owners and managers, September)

1. Bistro, 2 sites: "Last Tuesday the fish order came short again. I only found out when the invoice came, a week later. I spent Sunday night matching delivery notes to invoices with a highlighter."
2. Café group, 5 sites: "We switched produce supplier twice this year, but finding suppliers isn't the problem. Knowing what actually arrived is."
3. Pizzeria, 1 site: "Honestly I'd love more suppliers in the app. More choice, better prices."
4. Gastropub: "My head chef signs the delivery note without checking. Then I pay for things we never got. Last month that was about £600."
5. Hotel restaurant: "Our finance team chases credit notes for short deliveries every week. It takes days."
6. Bakery, 3 sites: "When something's missing I phone the supplier, they say it was delivered, and it's my word against theirs."
7. Calder Group (14 sites): "We need every supplier on your platform. If you had a marketplace, we'd move all our ordering to you."
8. Noodle bar: "I check deliveries on a clipboard. Then I re-type it into the app. Twice the work."
9. Steakhouse: "The invoice never matches the order. Substitutions, short weights. I just pay it, I don't have time."
10. Tapas bar: "I'd use a marketplace if it existed, I suppose. But day to day, what kills me is the paperwork."
